Grounded Pork Stuffed Bitter Melon Soup
Grounded Pork Stuffed Bitter Melon Soup, a cherished Khmer favorite, boasts a delicious combination of flavors and textures. The bitter melon, known for its unique sweet and bitter taste, is a key ingredient that adds character to this delightful soup.
To prepare the soup, start by creating a flavorful stuffing mixture. In a large bowl, combine grounded pork with chopped green onions, soaked and drained bean thread noodles, sugar, salt, fish sauce, and black pepper. This well-mixed combination forms the savory stuffing for the bitter melon.
The bitter melon is then cut in half and hollowed out to create a tube, providing the perfect vessel for the pork stuffing. Any leftover meat can be shaped into small meatballs, ensuring that no delicious mixture goes to waste. These stuffed bitter melon tubes are placed in a large soup pot, and water is added to the pot.
As the soup simmers, the pork cooks through, and the water reduces to form a rich and flavorful broth. To further enhance the taste, the soup is seasoned with additional sugar, salt, and fish sauce. This step adds depth to the flavors and ensures a well-balanced taste profile.
Before serving, the soup is garnished with chopped green onions, providing a fresh and aromatic finish. Best enjoyed hot with rice, Grounded Pork Stuffed Bitter Melon Soup encapsulates the essence of Khmer cuisine, offering a satisfying and comforting dining experience.
