Ingredients
2 cups sliced cucumber
2 small shallots sliced
1/2 red onion sliced
3 sweet peppers sliced
1/2 red or yellow bell pepper
2 green onions cut to about 1 inch long
1/3 cup vinegar more or less up to you
1/3 cup water
1/3 cup sugar more or less up to you
1 to 2 tablespoon of sliced ginger
2 cloves minced garlic
11/2 teaspoon salt or fish sauce to taste
Directions
- Mix the entire ingredients together until the vegetables are soft. Chill before serve.
- Adjust the flavor to your taste.
