Homemade Pickle Green Mustard Recipe

Homemade Pickled Green Mustard is a recipe that mirrors the Chinese pickled mustard greens, a staple ingredient in various Chinese dishes, particularly in Shandong and Sichuan cuisine. To prepare this delicacy, you’ll need Chinese mustard, water, salt, sugar, and raw rice. The mustard greens are first washed and left to air dry, either overnight in cold climates or for a few hours outside in warmer regions. They are then placed in a clean jar, cut or folded as desired.

Next, a mixture of boiling water, salt, sugar, and raw rice is prepared. This concoction is poured over the mustard greens in the jar, but it’s crucial to ensure that the greens are tender but not fully cooked. The heat is turned off, allowing the mixture to cool and infuse the mustard greens with flavor. The jar is then sealed and left undisturbed for 3 to 4 days, allowing the pickling process to take place. The rice used in the mixture serves as a natural preservative and can be discarded after pickling.

Once ready, the pickled mustard greens can be served alongside grilled fish or chicken. For an extra kick, minced chilies can be added to the dish.
