Khmer Prahok Ktis Recipe

The ingredients for Khmer Prahok Ktis include 12 ounces (350 grams) of ground pork, 1/2 cup of pea eggplants, 5 garlic cloves, 5 bird eye chilies, 1 tablespoon of oil (divided), 1 cup of coconut milk (about one can, but the quantity can be adjusted to personal preference), 2 tablespoons of prahok (fermented fish), 1/4 cup of water, 2 tablespoons of sugar (or to taste), and 2 tablespoons of kroeung (a blend of lemongrass, kaffir lime, galangal, and Mexican dried chili).
To prepare the dish, start by frying the garlic, chilies, and pea eggplants in a pan with 1 tablespoon of oil until they turn golden. Set them aside for later use. Pound only the garlic in a mortar and pestle to create a paste, leaving the eggplants and chilies aside for now.
In the same pan, add the remaining 1 tablespoon of oil and cook the ground pork until it’s almost done. Incorporate the garlic paste, coconut milk, eggplants, chilies, and kroeung, stirring well. Let it cook for a few minutes before adding sugar and prahok. Continue cooking until the meat is fully cooked. Adjust the flavor to your liking and then turn off the heat.

Directions to make Khmer Prahok Ktis Recipe
- In a fry pan put 1 tablespoon of oil and fry garlic, chilies, pea aubergine eggplants till it is golden, take it out and set aside
- In a mortar pestle pound only garlic to paste, leave the eggplant and chilies for later
- In the same fry pan add the last 1 tablespoon of oil and fry ground pork till almost done
- Add garlic paste, coconut milk eggplants, chilies, kroeung stir well,
- Cook for few minutes
- Add sugar prahok continue to cook until the meat is done
- Adjust the flavor to your taste, turn the heat off.
Serve Prahok ktis with rice and vegetables on the side for dip
Note: Prahok Ktis will be thicker when it cool down
