Steam Rice Noodle with Egg Recipe

Steam Rice Noodle with Egg is a unique Cambodian dish that originates from Battambang, near the Bor Pylen province. Unlike typical stir-fried noodles, this recipe involves steaming the noodles and combining them with a flavorful dressing and an array of vegetables. The key to this dish lies in the dressing, which adds a distinctive taste to the noodles. However, it’s a relatively complex recipe, not widely known in Cambodia due to its numerous steps.

To prepare this dish, you’ll need fresh Pho noodles, thinly sliced pork, oyster sauce, sugar, garlic or shallots, and a white onion. The meat is stir-fried until cooked and then combined with the oyster sauce, sugar, and onion. For the scallion oil, chopped green onions are cooked in hot oil until fragrant, creating a flavorful addition to the dish. The dressing, a crucial element, is made from Coco Rico Soda (or boiling water), vinegar or lime juice, fish sauce, sugar, minced shallots, and Thai chilies. It’s recommended to prepare the dressing a day in advance for enhanced flavor.

Additional toppings for the dish include thinly sliced cooked pork skin, dried baby shrimps pounded into powder, crushed roasted peanuts, bean sprouts, thinly sliced cucumber, Thai chili sauce, and various herbs like Thai Basil, Vietnamese mints, and cilantro.

The noodles themselves are prepared by soaking fresh Pho noodles for an hour, washing them, and coloring them with thick soy sauce or mushroom soy sauce. Afterward, they are steamed for about 5 minutes until soft and fully cooked. To prevent sticking, the noodles are mixed with the scallion oil while still warm.

To serve, arrange the desired amount of steamed noodles on a plate or in a bowl. Top them with a tablespoon each of stir-fried meat, cooked pork skin, crushed peanuts, dried shrimp, and slices of hard-boiled eggs. Add bean sprouts, cucumber, and a variety of herbs for freshness and flavor. Finally, drizzle the dish with the prepared dressing, a squeeze of lime juice, and a touch of chili sauce to taste. 2 packs of fresh Pho noodle
1 lb of thinly slice pork
2 tablespoon of oyster sauce
1 teaspoon of sugar
1 tablespoon of chopped garlic or shallots
1 white onion sliced
2 tablespoon of oil for stir fry the meat

For the scallion oil

4 green onions chopped
1/2 cup of olive oil
Heat oil in a sauce pan until hot add green chopped green onion
Cooked for 1 minutes then turn the heat off let cool.

For the dressing

1 can of Coco Rico Soda (12oz) or Boiling Water
1/4 cup of Vinegar or lime juice
1/2 cup of Fish sauce
6 tablespoon of Sugar (less up to you)
2 Shallots minced
2 Thai chilies minced
Mix everything taste and set aside, it is best to do the dressing a day before for flavor.
6 hard boil eggs cut to quarter or half, set aside

For the topping

Cooked Pork skin thinly slice
1/2 cup of dried baby shrimps soak wash and pound to powder set aside
1/2 cup of crush roasted peanut
Bean sprouts
Cucumber sliced thin
Thai Chili sauce
All kind of herbs like Thai Basil, Vietnamese mints, mints, cilantro ect…

Directions to make Steam Rice Noodle with Egg Recipe

For the meat

  1. In a hot wok add oil until hot
  2. Now add garlic or shallot stir fry until brown
  3. Add pork and stir fry until no longer pink
  4. Now add onion and oyster sauce, sugar, to it
  5. Mix them all together and stir fry until the pork is done.
  6. Let it cool down and set aside,

For Noodles

  1. 2 packs of fresh Pho noodle soak for 1 hour wash, and color with thick soy sauce or mushroom soy sauce, then steam the noodle in the steamer for 5 minutes until it is soft and cook through.
  2. Mix with scallion oil right away so the noodle  won’t stick when it cool down.
  3. Set aside.

To serve the noodle

  1. In a serving plate or a large bowl
  2. Put the amount of steam noodle you like then top with 1 tablespoon each of stir fry meat, cooked pork skin, crush peanut, dried shrimp, few slice of hard boil eggs, then add bean sprouts, cucumber, and herbs to it, drizzle with dressing and squeeze of lime juice and chili sauce.
