This Cambodian recipe features rice paper as the wrapper, filled with a delightful combination of cooked shrimp or chicken, green lettuce leaves, Thai basil, mint, rice noodles or bean thread noodles (prepared according to package instructions), and cucumber. The accompanying dipping sauce options include a sweet and sour fish sauce with vinegar or lime juice, and a hoisin-based sauce, both providing distinct flavors to complement the freshness of the spring rolls.

For the fish sauce dipping sauce, a mix of sugar, water, vinegar or lime juice, fish sauce (or soy sauce as an alternative), minced Thai chilies, and minced garlic creates a well-balanced combination of sweetness, tanginess, and spice. Adjusting the flavors allows for a personalized taste profile that is slightly sweet, sour, spicy, and not overly salty. The hoisin dipping sauce, featuring hoisin sauce, water, soy sauce, sugar, lime juice, chili garlic paste, and sriracha or hot sauce, adds a rich and savory element to the dipping experience.

The preparation of the Cambodian Fresh Shrimp Spring Rolls involves soaking the rice paper in water until it softens, laying a lettuce leaf, noodle, cucumber slices, basil, mint leaves, and shrimp or chicken on the rice paper, and then rolling it forward while folding the sides. The result is a visually appealing and flavorful dish that showcases the vibrant and fresh ingredients within each bite.
