Cambodian Ginger Fried Rice

Cambodian Ginger Fried Rice is a delectable dish that pairs exceptionally well with chicken, roasted duck, ham, or even hot dogs. The key to its great flavor lies in using fresh ginger. The ingredients for this dish include 4 cups of day-old cold rice, 1 cup of diced cooked chicken or ham, scrambled and thinly sliced eggs, chopped green onions, minced shallots, minced garlic, julienned fresh ginger (adjust according to preference), and vegetable oil for stir-frying. Optional cilantro can be used for garnish.

To prepare the stir-fry sauce, combine sugar, seasoning soy sauce, dark soy sauce (for a deeper color), sesame oil, and black pepper to taste. Mix all the ingredients together, reserving the black pepper for later.

In a wok, heat vegetable oil over medium-high heat. Add shallots and minced garlic, stirring until they turn brown but not burnt. Incorporate the chosen protein (chicken, ham, or shrimp) and stir-fry until heated through. Add the cold rice and break it apart to prevent lumps. Continue to stir-fry until the rice is thoroughly heated.

Pour in the prepared sauce, ensuring it coats the rice mixture evenly. Stir-fry until all the ingredients are well combined. Turn off the heat and add the cooked eggs and green onions. The dish is then ready to be served hot, with a dash of black or white pepper for added flavor.
