The preparation starts by combining kosher salt, sugar, and cold water to create a brine. The chicken is then immersed in this mixture and allowed to sit for an hour at room temperature. Afterward, it’s patted dry, rubbed with oil and Chinese five spice, and stuffed with slices of garlic and ginger. Toothpicks are used to secure the chicken.

In a large oven-proof pan, oil is heated on the stovetop, and the chicken is seared for about 5 minutes on each side. The glaze, a blend of Chinese rice wine, soy sauce, Worcestershire sauce, chili garlic sauce, hoisin sauce, brown sugar, minced garlic, and minced ginger, is then applied to the chicken, imparting rich and savory flavors.

The pan with the chicken is then transferred to a 350-degree oven. Throughout the roasting process, which takes about 2 hours (adjusting based on your oven), the chicken is basted with the remaining glaze every 10 minutes. This ensures the chicken is thoroughly coated and infused with the flavors of the glaze.

A helpful tip is provided: if the top of the chicken starts to brown too quickly, covering it with foil for the last 20 minutes of roasting will prevent it from burning. It’s crucial to ensure that all the glaze is fully absorbed before covering the chicken.

4 lbs (1800 gram) roasting chicken
1/2 cup of kosher salt
1/4 cup of sugar
4 cups of cold water
2 tablespoon of oil
1 teaspoon of Chinese five spice
3 gloves of garlic sliced
5 slices of ginger


1/2 cup of Chinese rice wine
1/4 cup of soy sauce
1/4 cup of Worcestershire sauce
1 teaspoon of chili garlic or rooster sauce
2 tablespoon of hoisin sauce
1/4 cup of brown sugar
1 tablespoon of minced fresh garlic
1 tablespoon of minced fresh ginger
Mix them all together and set aside for basting.

Directions to make Cambodian Roasted Chicken Recipe

  1. Combine salt, sugar and water then put the chicken in let it sit for 1 hour in room temperature
  2. Take it out and pat dry.
  3. Rub with 1 tablespoon of oil and five spices
  4. Stuff the cavity with garlic and ginger slices
  5. Secure the chicken with toothpicks
  6. On the stovetop, Heat a large oven proof pan with 2 tablespoon of oil then sear the chicken 5 minutes on each side
  7. Apply some glaze on the chicken (both sides)
  8. Then transfer pan and chicken to 350 degree oven
  9. Baste the chicken with the remaining sauce, glaze every 10 minutes until the chicken is done roasting (about 2 hours or less depend on your oven)

Note: if it is starts to burn on the top, cover with foil at the end for the last 20 minutes or so, make sure the entire glaze is gone before you cover.
