To create the caramelized sauce, a mixture of water, sugar, and dark sweet soy sauce is prepared in a medium-sized pan. Once the caramelization is achieved, chunks of pork belly are added to the mixture.

Care is taken during the caramelization process to ensure that it is done over low heat, as high heat may lead to burning. Ingredients

6 hard boil eggs (peel)
1 tablespoon of water
1 tablespoon of sugar
2 cups of water
3 cloves of garlic minced
1/4 cup of fish sauce
1/4 cup of sugar
1 tablespoon of dark sweet soy sauce (dragon brand)
1 teaspoon of salt
2 stars anise
1 can of coconut juice (not coconut milk)
1/2 teaspoon of black pepper
1 1/2 lbs pork belly cut to chunks

Directions to make Chinese Caramelized Pork with Eggs

  1. In a medium size pan caramelized 1 T of water, dark soy sauce and sugar till golden brown, stir frequently, add pork
  2. Mix till all side turn brown (make sure you do it on low heat at this point or the meat will burn from the caramelized sugar)
  3. Then add 2 cups of water stir well, star anise, garlic, fish sauce, sugar, and coconut juice, and stir well,
  4. Cook on low heat for at least 30 minutes stir from time to time so the bottom of the pan won’t burn
  5. And the meat cooks through
  6. Last add boil egg and black pepper simmering till the pork meat is tender.

Serve hot over rice
