Chinese Caramelized Pork with Eggs

Chinese Caramelized Pork with Eggs is a beloved dish across Asia, particularly in China, Vietnam, and Cambodia. This flavorful recipe involves slow-braising pork until it achieves a caramel hue and reaches a tender texture. The extended cooking time allows the flavors to meld, resulting in a dish with rich depth.

The ingredients for this dish are relatively simple. It begins with six hard-boiled eggs, which are peeled and set aside. To create the caramelized sauce, a mixture of water, sugar, and dark sweet soy sauce is prepared in a medium-sized pan. This mixture is cooked until it transforms into a golden-brown hue, with the sugar and soy sauce providing a sweet and savory foundation. Once the caramelization is achieved, chunks of pork belly are added to the mixture.

Care is taken during the caramelization process to ensure that it is done over low heat, as high heat may lead to burning. Following the addition of water, star anise, minced garlic, fish sauce, sugar, and coconut juice, the mixture is stirred thoroughly. This step ensures that the flavors are evenly distributed and absorbed by the pork. The dish then simmers on low heat for a minimum of 30 minutes. During this time, occasional stirring is important to prevent the mixture from sticking to the bottom of the pan and to guarantee even cooking of the meat.

As the final touch, the hard-boiled eggs are gently introduced into the simmering mixture, along with a sprinkle of black pepper. The dish continues to simmer until the pork reaches a tender consistency. Once ready, it is served hot over a bed of rice, providing a hearty and flavorful meal that captures the essence of this beloved Asian dish.
