Grilled Mexican Chicken with Mango Salsa
Grilled Mexican Chicken with Mango Salsa is a quick, healthy, and flavorful dish that requires minimal effort and simple ingredients, making it an ideal option for a busy dinner. The key to this recipe lies in the marination of chicken breasts, enhancing their taste with a zesty Enchilada seasoning mix, olive oil, and lime juice. This quick marinating process infuses the chicken with a burst of Mexican flavors.
To prepare the Mango Salsa, a vibrant mix of fresh ingredients is combined. Diced tomatoes, chopped white onion, minced garlic, and chunks of ripe mango form the base of the salsa. These are then complemented by cilantro, chopped green onion, and a squeeze of lime juice. For a touch of heat, finely chopped jalapeño is added. A tablespoon of sugar balances out the flavors, while a hint of salsa seasoning mix provides an extra layer of depth.
Once all the ingredients are assembled, they are mixed together to create a harmonious blend of flavors. The salsa’s taste can be adjusted to personal preference by adding salt or additional lime juice. After mixing, the salsa is left to chill in the refrigerator for about 30 minutes, allowing the flavors to meld and intensify.
When it’s time to serve, the marinated chicken is grilled over medium-high heat for approximately 5 minutes on each side, or until fully cooked. The result is succulent, juicy chicken with a delightful charred exterior. The Grilled Mexican Chicken is then plated alongside the refreshing Mango Salsa. For a complete meal, it can be accompanied by a side of Mexican rice, adding a satisfying element to this easy and healthful dinner option. This dish offers a delicious taste of Mexican cuisine with its bold flavors and vibrant ingredients. Enjoy the Grilled Mexican Chicken with Mango Salsa for a flavorful and hassle-free meal!
