Homemade Italian Sausage recipe
The Homemade Italian Sausage recipe presents a flavorful and easy-to-make option that stands out with its rich taste. Comprising ground pork with 25% fat, this dish is a departure from the typical Cambodian recipes, bringing an Italian flair to the table. The ingredients include Spaghetti seasoning from Costco, Italian seasoning, fresh chopped Italian Parsley, toasted fennel seeds, dry red wine or red wine vinegar, salt, paprika, cayenne, ground anise, minced garlic, fresh ground black pepper, and optional crushed chilies for those who prefer spicier sausages.
The preparation involves sprinkling the spices evenly over the ground pork and mixing thoroughly by hand until well combined. The sausage casings are washed and cleaned before being stuffed using a Kitchen Aid. For an added dimension of flavor, sautéed green bell pepper and onion can be incorporated into the mixture, offering a slightly different taste profile. The sausage mixture is then stuffed into casings, providing a traditional appearance to the sausages.
A unique aspect of this recipe is the option to fan-dry the sausages before storing them in the freezer or refrigerator. The recipe yields about 15 large sausages or 20 small ones. Additionally, a versatile suggestion is provided: rather than stuffing the sausage into casings, it can be used as ground sausage for a variety of pasta dishes, especially when paired with a homemade Marinara pasta sauce.
In conclusion, the Homemade Italian Sausage recipe not only offers a delicious departure from traditional Cambodian fare but also provides a customizable and versatile option for sausages. Whether enjoyed on its own, stuffed into casings, or used as ground sausage in pasta dishes, this Italian-inspired creation is sure to satisfy taste buds and make for a memorable culinary experience.
