Spicy Fried Oyster Salad

Spicy Fried Oyster Salad is a delectable Khmer dish featuring succulent and garlicky oysters, creating an absolute delicacy. It’s interesting to note that, back home, some Khmer individuals, particularly those with superstitious beliefs, tend to avoid oysters due to the belief that these creatures can change sex, alternating between male and female. There’s a belief that consuming oysters may lead to disruptions in motor skills.

To prepare this flavorful dish, begin by cleaning and brushing the oyster shells under water before opening them and placing the oyster meat in a bowl. Season the oyster meat with minced garlic, a dash of salt, and cayenne pepper to taste. The flour and cornstarch are combined in a plastic bag, and the oyster meat is added and gently shaken to coat. The oyster meats are then deep-fried in hot vegetable oil until they achieve a golden brown color.

To serve, arrange chopped lettuce on a plate and top it with thinly sliced cucumber. Place the fried oysters on top of the salad and drizzle the ensemble with sweet fish sauce. This Spicy Fried Oyster Salad is meant to be served immediately, ensuring the oysters maintain their crispy texture. The dish offers a perfect balance of flavors and textures, showcasing the unique culinary diversity found in Khmer cuisine.


1 dozen oyster
2 cloves of garlic, minced
A dash of salt
1 teaspoon of cayenne pepper or to your taste (option)
1/2 cup of all purpose flour
2 tablespoons of cornstarch
1 cups of vegetable oil for deep fry oyster
3 cups of chopped lettuce
1 cucumber, sliced thin

Directions to make Spicy Fried Oyster Salad

  1. Brushed and cleaned oyster shells under water well before open shells, put oyster meat in a bowl.
  2. Seasoning oyster meat with garlic, salt, red and black pepper(no need for much salt since the oyster is already salty.)
  3. Put flour and cornstarch in a plastic bag, shake well, add oyster meats in bag, shakes bag gentle.
  4. Heat oil in a frying pan or wok on high temperature.
  5. When oil bubbling hot, drops oyster in hot oil, deep fried oyster in hot oil till it golden brown.
  6. Removed cooked oyster and put it on a plate covered with paper towel to drain off excessive oil.


  1. Put lettuce on a plate, and arrange sliced cucumber on top.
  2. Places fried oyster on top of salad, drizzles with sweet fish sauce.
  3. Serve immediately.
