Khmer Zucchini soup with pork meatball is very delicious and very easy to make. If you don’t eat pork, you can substitute with grounded turkey, or grounded fish. Zucchini is an ancient vegetables that edible either raw or cook and it was originated from Italy. Zucchini is one of a member of squash family, very low calories and packed with vitamins. Grounded pork0.25 kg
Tablespoon fish sauce½
Tablespoon sugar½
Teaspoon black pepper¼
Stalks green onion, minced2
Cups water4
Medium size Zucchini, approx 1 ½ lbs, peeled and sliced2
Tablespoon fish sauce1
Tablespoon sugar½
Teaspoon salt¼
Teaspoon black pepper¼
Handful of chopped cilantroA

Directions to make Zucchini Soup

  1. In a small bowl, mix grounded pork with fish sauce, sugar, black pepper and onion, then using your hands to makes small meatballs, set a side.
  2. Boiled water in a soup pot.
  3. Drops meatballs in to boiling water.
  4. When meatball cooked, add zucchini.
  5. Seasoning with fish sauce, sugar, salt and black pepper.
  6. Top with cilantro.
  7. Serve hot with rice or with hot bread.
