Cambodian Cucumber Salad Recipe is mainly made of cucumber. It is one of the more popular Asian dishes and Cambodian favorites – it goes great in a salad, snack or as a side dish with your meal.

Ingredients

  • 2 cups sliced cucumber

  • 2 small shallots sliced

  • 1/2 red onion sliced

  • 3 sweet peppers sliced

  • 1/2 red or yellow bell pepper

  • 2 green onions cut to about 1 inch long

  • 1/3 cup vinegar more or less up to you

  • 1/3 cup water

  • 1/3 cup sugar more or less up to you

  • 1 to 2 tablespoon of sliced ginger

  • 2 cloves minced garlic

  • 11/2 teaspoon salt or fish sauce to taste

Directions

  • Mix the entire ingredients together until the vegetables are soft. Chill before serve.
  • Adjust the flavor to your taste.
