Delicious opo squash soup with fish is authentic recipe from Cambodia. Opo squash taste resembling to zucchini, that you either love it or hated it. Belongs to the gourd family, one of the opo squash varieties shaped like bottle, which old Khmer tale said it contains a pure black magic potion. Due to that reason , many religious and superstitious Khmer do not eat Opo squash. Because of their beliefs that religion and black magic do not mix.

Delicious opo squash soup with fish is authentic recipe from Cambodia. Opo squash taste resembling to zucchini, that you either love it or hated it. Belongs to the gourd family, one of the opo squash varieties shaped like bottle, which old Khmer tale said it contains a pure black magic potion.

Ingredients

  • 4 cups water

  • 1 whole medium size trout or catfish, cleaned and cut chunk

  • 2 lbs (900 gram) of opo squash, peeled and sliced

  • 2 tablespoons roasted rice powder

  • 2 tablespoons fish sauce

  • 1 tablespoon sugar

  • 2 stalks of green onion, chopped

  • 1/2 teaspoon black pepper

Directions

  • Put water in a soup pot, cook till water bubbling, add fish and opo squash to boiling water, cook till fish tender.
  • Seasoning with roasted rice powder, fish sauce and sugar.
  • Top with green onion and black pepper.
  • Serve hot with rice.
