Belongs to the gourd family, one of the opo squash varieties shaped like bottle, which old Khmer tale said it contains a pure black magic potion. Due to that reason , many religious and superstitious Khmer do not eat Opo squash. Because of their beliefs that religion and black magic do not mix.

Ingredients
4 cups water
1 whole medium size trout or catfish, cleaned and cut chunk
2 lbs (900 gram) of opo squash, peeled and sliced
2 tablespoons roasted rice powder
2 tablespoons fish sauce
1 tablespoon sugar
2 stalks of green onion, chopped
1/2 teaspoon black pepper
Directions
- Put water in a soup pot, cook till water bubbling, add fish and opo squash to boiling water, cook till fish tender.
- Seasoning with roasted rice powder, fish sauce and sugar.
- Top with green onion and black pepper.
- Serve hot with rice.
