Green Papaya Salad or Khmer Bok Lahong
Green Papaya Salad, also known as Khmer Bok Lahong, shares similarities with the Thai recipe called Thai Som Tam. This easy-to-make dish requires only a handful of ingredients, offering the flexibility to adjust the flavor according to personal taste preferences. The primary ingredient is one pound of shredded green papaya, providing a crisp and refreshing base for the salad.
The flavorful dressing is created by pounding garlic, Thai chilies, lime juice, dried shrimps, and long beans in a deep mortar and pestle until a paste-like consistency is achieved. Additional components include salty baby crabs, Tuk prahok or cooked prahok (adjustable to taste), sliced tomatoes, fish sauce, and optional palm sugar, added at the end if desired. The salad is garnished with 1 to 2 tablespoons of crushed roasted peanuts, providing a delightful crunch.
To serve Green Papaya Salad, it is recommended to accompany it with fresh cabbage, saw leaves, or any variety of lettuce. This adds a complementary texture and enhances the overall dining experience. The result is a vibrant and flavorful dish that captures the essence of Khmer cuisine. Whether enjoyed as a light lunch or a side dish, this salad offers a delightful combination of textures and tastes, showcasing the versatility of green papaya in Cambodian culinary traditions.
