Cambodia Stir Fry Pork with Holy Basil
This Cambodian Stir Fry Pork with Holy Basil is a popular and simple dish in Thailand and Cambodia that can be made with either chicken or pork. The key ingredient is the holy basil, known as Mreas Prov in Khmer. It’s important to note that using regular Thai basil won’t yield the same flavor. The dish also incorporates a variety of colorful vegetables, such as long beans, red bell pepper, and yellow pepper.
To prepare the dish, start by heating oil in a pan and deep frying one cup of holy basil until crisp. Set it aside on a paper towel for garnish. In the same pan, add more oil and cook minced garlic along with minced red chilies until the garlic turns brown. Next, add the ground or sliced pork and stir-fry until it is no longer pink. Then, toss in the assorted vegetables and cook until they reach the desired level of tenderness.
For the stir fry sauce, combine oyster sauce, golden mountain soy sauce, fish sauce, brown or palm sugar, and lime juice. Pour this mixture into the pan and stir well to coat the ingredients. Finally, add the remaining fresh holy basil and mix it into the stir fry before turning off the heat.
When serving, spoon the stir fry onto a plate and garnish it with the previously deep fried basil. Additionally, topping it with a fried egg adds an extra layer of flavor. This dish is best enjoyed with a side of rice for a delicious and satisfying meal.
