Special Thai Chicken Satay
The Special Thai Chicken Satay is a highly flavorful and popular dish in South East Asia, known for its delicious taste and unique marinade. The chicken breast is sliced or cubed and marinated overnight with a blend of ingredients including brown sugar, 5 spice powder, curry powder (or curry paste), cumin, minced garlic, turmeric, coconut milk, and fish sauce. This marinade imparts a rich and aromatic flavor profile to the chicken, ensuring a delectable and tender result when cooked.
The dish is complemented by a refreshing Vegetable Pickle, featuring cucumber slices, shallots, Thai chili, vinegar, water, sugar, and salt. This pickle provides a tangy and crunchy contrast to the succulent chicken satay, offering a harmonious blend of flavors and textures.
Additionally, a separate Vegetable Pickle is prepared with cucumbers, carrots, Nampa cabbage, regular cabbage, garlic cloves, salt, sliced ginger, jalapeño pepper, sugar, vinegar, and fish sauce. This pickle offers a medley of crisp and vibrant vegetables, infused with the bold flavors of ginger, garlic, and chili, creating a delightful accompaniment to the satay.
To prepare the dish, the marinated chicken is grilled over medium heat for approximately 6 to 8 minutes on each side, or until fully cooked. An optional additional sauce can be made for basting during the final stages of grilling, enhancing the flavor even further.
The Special Thai Chicken Satay is best served with rice, providing a satisfying and complete meal. The combination of tender chicken with the aromatic marinade, along with the tangy vegetable pickles, results in a dish that is both delicious and visually appealing, making it a perfect choice for a special occasion or family gathering.
