Cambodian Cashew Chicken Recipe
The Cambodian Cashew Chicken Recipe offers a delectable combination of tender stir-fried chicken and roasted cashews in a flavorful garlic sauce. This dish is not only delicious but also easy to prepare in the comfort of your own home.
To create this dish, you will need 1 cup of sliced chicken breast, 1 carrot, 1/2 red pepper (sliced), 1/2 chopped onion, and 1/2 cup of cashew nuts. Additionally, you’ll need 1 tablespoon of minced garlic, 2 chopped green onions for garnish, 2 tablespoons of roasted coconut flakes for garnish, and 2 tablespoons of oil for cooking.
The sauce for the stir fry is a key component, consisting of 1 tablespoon of fish sauce, 1 tablespoon of soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon of sugar, and 1 teaspoon of crushed chili (optional for a spicy kick). Combine all these sauce ingredients and set them aside for later use.
Begin by heating 1 tablespoon of oil on high heat, then add the minced garlic and fry until it turns brown. Add the sliced carrots and stir-fry for a few minutes before adding the chicken, continuing to stir-fry until the meat is nearly cooked through. Next, incorporate the red pepper and chopped onion, stir-frying until the vegetables reach a tender consistency.
Turn off the heat, and garnish the dish with roasted coconut flakes for an added layer of flavor and texture. This Cambodian Cashew Chicken is best served hot with cooked rice, providing a delightful blend of succulent chicken, crunchy cashews, and aromatic garlic sauce.
