Cornish Hen with Green Papaya Salad

The Cornish Hen with Green Papaya Salad is a delectable Khmer dish that combines shredded green papaya, steamed Cornish hen, a medley of herbs, and a sweet and spicy vinaigrette sauce. In Cambodia, this salad is traditionally made with chicken or duck and is reserved for special occasions. The dish showcases a fusion of flavors, blending the unique taste of green papaya with the savory goodness of the Cornish hen and the aromatic herbs.

To prepare this flavorful dish, start by steaming a 2-pound Cornish hen for 45 minutes. Once cooked, let it cool down, then cut the wings and legs off, and shred the meat. Additionally, peel, seed, and shred a pound of green papaya (or use pre-shredded papaya), peel and shred two carrots, and gather a handful of chopped mint leaves and Asian coriander. A vinaigrette sauce is created by mixing white vinegar, water, sugar, salt, Sambal Olekek chili paste (optional), fish sauce, minced garlic, and sliced sweet onion.

In the final steps, the shredded chicken, papaya, carrots, and herbs are combined in a large bowl. The prepared vinaigrette sauce is poured over the mixture, creating a harmonious blend of textures and flavors. The dish is completed with a sprinkle of crushed unsalted roasted peanuts, adding a delightful crunch to the ensemble.
