Daikon Beef Stew Recipe
The Daikon Beef Stew Recipe is a cherished dish in Kampuchea Krom, often reserved for special occasions due to the cost of beef. The recipe highlights the preference for oxtail over beef chuck in this region. The dish is a delightful combination of tender beef, daikon, and flavorful seasonings, making it a wonderful accompaniment to rice or crusty bread.
To begin, the recipe calls for vegetable oil to be heated in a large soup pot. Minced garlic, chopped yellow onion, and chunks of beef chuck are added and stirred together, creating a fragrant base for the stew. The beef is then seasoned with soy sauce, fish sauce, sugar, salt, black pepper, and a hint of grounded cinnamon powder, adding depth and complexity to the flavor profile.
Next, six cups of water and a can of Hunt’s tomato sauce are introduced to the pot, creating a hearty and flavorful broth. The stew is allowed to simmer until the beef becomes tender, allowing the flavors to meld together. Yukon or white potatoes, along with chunks of daikon and chopped celery, are then added to the stew. The lid is placed on the pot, and the stew is cooked until the vegetables reach a desired level of tenderness.
The Daikon Beef Stew is best served hot and can be enjoyed with a side of rice or hot, crusty Italian or French bread. This dish represents a culinary tradition rooted in the rich flavors of Kampuchea Krom and provides a hearty and satisfying meal option for special occasions.
