Cambodian BBQ Whole Chicken with Tamarind Sauce
Cambodian BBQ Whole Chicken with Tamarind Sauce is a delicious and easy-to-make recipe that is perfect for a special occasion or a weeknight meal. The chicken is first marinated in a mixture of garlic seasoning salt, dark soy sauce, and Chinese roasted chicken. Then, it is grilled and baked until it is cooked through and the skin is crispy.
The tamarind dipping sauce is made with sugar, fish sauce, tamarind, water, Thai chilies, garlic, and fried garlic. It is a sweet, tangy, and spicy sauce that pairs perfectly with the grilled chicken.
To serve, simply place a lettuce leaf on a plate and top with sliced cucumbers or tomatoes, grilled chicken, herbs, and tamarind dipping sauce. Fold the lettuce leaf in half and enjoy!
Ingredients
One Whole chicken 4 to 5 lbs cut to open in half but don’t cut it all the way | ||
1 tablespoon of Garlic seasoning salt from Costco | ||
2 tablespoon of dark soy sauce to give color | ||

3 tablespoon of sugar | ||
3 tablespoon of fish sauce | ||
2 tablespoon of tamarind | ||
3 tablespoon of water | ||
2 Thai Chilies minced | ||
1 cloves minced garlic | ||
1 tablespoon of fried garlic |
Vegetables
Sliced cucumbers | ||
Sliced red or green tomatoes | ||
Sliced green mango | ||
Sliced green apple | ||
Mints and Thai Basil | ||
And Romaine lettuce leaves | ||

Directions to make Cambodian BBQ Whole Chicken with Tamarind Sauce
- Rubs the ingredients all over the chicken inside and outside
- Marinate it overnight.
- Before you bake the chicken heat any kind of grill on high then turn down to low and grill the chicken both side for 15 minutes (to seal the skin of the chicken so it won’t fall off when you bake) then transfer to a preheat oven for 400 degree and bake for 30 more minutes or until the chicken is done. Take the chicken out and set aside.
- For tamarind dipping Sauce: Mix all ingredients and taste it should be sour sweet spicy but not much in salt so adjust the dipping sauce to your taste.
To serve take lettuce leaves and sliced cucumbers or tomatoes top with chicken herbs and spoon sauce on the top fold the lettuce leaves and enjoy.
