Shrimp Stuffed Bitter Melon Soup

Shrimp Stuffed Bitter Melon Soup is a delectable Khmer dish that features the unique combination of bitter melon filled with shrimp and taro root in a flavorful soup. The preparation of this dish is straightforward and can be easily recreated at home by following the provided recipe.

To start, a mixture is created by combining peeled, deveined, and ground shrimp with corn starch, fish sauce, black pepper, soaked and chopped bean thread noodles, and chopped green onions. This shrimp stuffing is set aside for later use in the recipe.

The bitter melon is halved and crosswise cut, and its seeds are carefully removed before being washed and drained. The shrimp stuffing is then used to fill the hollowed bitter melon halves, creating a harmonious blend of flavors.

In a large soup pot, the stuffed bitter melon is combined with cubed taro root and water. The pot is covered with a lid, and the mixture is simmered until the bitter melon reaches a tender consistency. The soup is then seasoned with fish sauce, salt, and sugar, enhancing its overall taste profile.
