Bitter melon stuffed with shrimp and taro root soup is delicious Khmer country food. It is one of the best Asian recipes in South East Asia. Shrimp, peeled, de-veins and grounded0.25 kg
Tablespoon corn starch½
Tablespoon fish sauce1
Teaspoon black pepper¼
Cup already soaked and chopped bean thread noodle¼
Stalk green onion, chopped1
Large bitter melon2
Cups water6
Cup cubes taro root1
Tablespoon fish sauce1
Teaspoon salt1
Tablespoon sugar1
Stalks green onion, chopped2
Dash of black pepperA

Directions to make Shrimp Stuffed Bitter Melon Soup

  1. In a small bowl, mix shrimp with corn starch, fish sauce, black pepper, bean thread noodle and onion, mixed well and set a side.
  2. Cut bitter melon in half, cross wide; carefully removed all seeds, washed and drained.
  3. Stuffs bitter melon with shrimp stuffing, when done set a side.
  4. In a large soup pot, put stuffed bitter melon with taro and water, covered soup pot with lid, and simmering till bitter melon tender.
  5. Seasoning with fish sauce, salt and sugar.
  6. Top with chopped green onion and black pepper.
  7. Serve hot with rice.
